So around the CookBook Homestead, we've been trying to eat healthier. Mostly this just means paying more attention to what we're eating so that we (and by "we" I mean "me") can't be all "oh, I'm sure I had veggies today... like in that enchilada, right?"
My weakness is snacking. This partly has to do with the fact that I am up at 6 am but don't eat lunch until noon (in a school with three lunches you can eat as early at 10:30 am or as late as 12:15 pm). In the past couple of years I've switched from vending machine candy to granola bars but snacks that require more forethought than hauling the Costco box in from my car are a challenge for me.
But while watching Anthony Bourdain tramp around Maine, I made up this little number:
Apple and Havarti cheese on a Wasa sourdough cracker (the apple is left over from the apple & basalmic vinegar reduction we had for dinner with pork chops). I think it's a Jonagold. Do other people in the country care this much about what type of apple they use?
I even made up a little snack pack for tomorrow. I'm guessing this will last for about 3 days, but I'm going to enjoy my nutritional awesomeness while I can.

Your snack sounds great! I love Wasa crackers. I'm glad you are both eating better and more creativly.
And, I commented FIRST! Although the Comment Queen seems to have dropped out of sight since Payton arrived.
Wasa crackers leave a HUGE mess. Or maybe it was just me?
I have never tried the crackers but it looks good enough to eat. I know what you mean about snacking the only way I control myself is not to have any in the house but that is sooo boring. G&GBook
